In this post, we are looking at Lemons, a core ingredient of our lemon twist juice drink.  They are also present in the green vitality juice.  Their sharp refreshing taste complements many dishes and they have some great benefits for your health.

Lemons  are a great source of Vitamin C, B6, flavonoids and folic acid.  Folic acid has been shown to inhibit colon cancer as well as prevent heart disease.  They also contain an important phytochemical called limonene.  Limonene has been shown to inhibit development of cancer and is a solvent of cholesterol meaning it can dissolve gallstones.  The highest concentration of limonene is found in the rind of the lemon.  Speaking of which, if you are planning on preparing on using lemon rind make sure you select organically grown lemons.  Conventionally harvested fruits often have some small residue of pesticide left on the outside.

TIP: When juicing a lemon, in order to extract the maximum amount of juice it is better if the lemon is warm.  You can try placing the lemon in warm water or rolling the lemon under the palm of your hand on a flat surface. 

If you are trying to avoid salt, why not try serving lemon wedges with meals?  It makes a great salt substitute.
