It’s February and there isn’t much happening with the local farmers markets, so it’s a great time to head to “Grand Ma’s” root cellar. This means it’s a good time to look to the more below ground vegetables to play with. These are the ones that require some consideration and care.
In the winter months we like to use items in the squash, gourd and root vegetable families because these will give us the vitamins and minerals we still need, but can’t get from the leafy greens this time of year.
