3 Healthy Summer Meals For a Happy Gut

Summer is upon us. We all want easy and healthy meals to keep us fueled in the sun. Nourish your body with these recipes below that include ingredients that not only will support a healthy gut but are delicious. 

Turkey Taco Lettuce Wraps (4 servings) 

Ingredients:

2 tbsp. extra-virgin olive oil

1 small yellow onion, chopped

1 lb. ground turkey

1 tsp. kosher salt

1 tbsp. tomato paste

1 tbsp. chili powder

1 c. low-sodium chicken broth

2 heads romaine lettuce, outer leaves separated

Directions:

  1. Heat your oil in a large skillet over medium-high heat 
  2. Add onion and cook until soft (5 minutes)
  3. Add turkey, season with salt, and break up meat (4 minutes)
  4. Add tomato paste and chili powder (1 minute)
  5. Add broth, simmer, and stir occasionally until thick (2 minutes)
  6. Double up lettuce leaves and divide meat mixture among leaves then sprinkle with cheese, tomato, onion, avocado, and cilantro and serve

Kale & Avocado Salad with Blueberries & Edamame (4 servings)

Ingredients:

6 cups stemmed and coarsely chopped curly kale

1 avocado, diced

1 cup blueberries

1 cup halved yellow cherry tomatoes

1 cup cooked shelled edamame

¼ cup sliced almonds, toasted

½ cup crumbled goat cheese (2 ounces)

¼ cup olive oil

3 tablespoons lemon juice

1 tablespoon minced chives

1 ½ teaspoons honey

1 teaspoon Dijon mustard

1 teaspoon salt

Directions:

  1. Put kale into a large bowl and massage with your hands to soften leaves
  2. Add avocado, blueberries, tomatoes, edamame, almonds, and goat cheese
  3. Combine oil, lemon juice, chives, honey, mustard, and salt in a small bowl and whisk to combine
  4. Drizzle the vinaigrette over the salad, toss, and serveSalad recipe  

Grilled Artichokes with Yogurt-Dill Dipping Sauce

Ingredients:

Kosher salt

1 lemon (halved)

4 large artichokes 

2 tablespoons olive oil 

½ cup of low-fat Greek yogurt

1 teaspoon chopped fresh dill

Directions:

  1. Boil a large pot of salted water
  2. Fill a large bowl with water, squeeze in juice from one half of lemon, and add lemon half
  3. Trim each artichoke, scoop out choke, and add to lemon water 
  4. Drain the artichokes after soaking in lemon water then add them to boiling water (10-15 minutes)
  5. Drain, brush with olive oil, and grill artichokes cut side down over medium-high heat (5 minutes)
  6. Squeeze other half of lemon (2 tbsp) in small bowl and whisk in yogurt and dill 
  7. Serve artichokes with dipping sauce and enjoy
