High Pressure Processing: What is it, and why is it better?


What exactly goes into each bottle of Living Juice? What may seem a simple smoothie actually involves a highly advanced technique called High Pressure Processing. Unlike traditional methods of destroying harmful bacteria and food borne pathogens like Pasteurization, HPP does not involve a thermal component. Simply put, this means that heat isn’t utilized and as a result the beneficial nutrients and bacteria that our body needs aren’t eliminated. Instead, we introduce fruits and vegetables to pressure matching the bottom of the ocean (around 87,000 psi) to remove spoilage organisms. Antioxidants, vitamins, and the functional properties of the beverage remain intact. Nothing is added, shredded, or heated and the result is delicious, organic, preservative-free juice with a lengthy shelf life.

Pasteurization is the primary method of bacteria and harmful organism removal in juices. The juice is heated by passing it between heated stainless steel plates, then held at that temperature for at least 15 seconds before it’s quickly cooled back to its original temperature of 39° F. Though effective for protecting us from nasty organisms, pasteurization can alter the functional integrity of a juice. The loss of vitamins, for example, is one drawback that we just don’t see in High Pressure Processing.
