Beets are also inexpensive, and can keep for 2-3 weeks if stored properly. (Don’t toss the greens – they’re also nutrition-packed, and can be used in recipes in place of spinach or kale.)

Beets - recipe by O2 Living - makers of organic cold-pressed fruit and vegetable Living Juices

Ingredients:

  • 1 lb. organic beets, peeled
  • 1 large organic shallot, minced
  • salt and freshly ground pepper to taste
  • 2 tsp. Dijon mustard
  • 1 tbsp. extra virgin olive oil
  • 1 1/2 tbsp. balsamic vinegar
  • 1 tbsp. chopped organic parsley

Directions:

Grate the beets. In a bowl, combine shallots, salt, pepper, mustard, oil and vinegar. Add beets, and top with parsley.
