THIS SIMPLE SNACK IS A WINNER NOT ONLY FOR ITS FLAVOR BUT ALSO FOR ITS VARIED TEXTURES: chewy, crunchy and crispy. It's a delicious combination of three great red fruits: apples, cranberries and pomegranate seeds.
Combine apples, almonds, cranberries, dates, nondairy vanilla yogurt, and lemon juice until all the ingredients are well mixed. Divide the salad onto 4 plates and add the pomegranate seeds as a topping. The salad will hold well in the fridge overnight. (lemon juice will act as a natural preservative).
1 apple, sliced
1/2 cup almonds steeped overnight,
1/2 cup dried cranberries,
1/4 cup chopped dates,
1 cup nondairy vanilla yogurt,
1/4 cup pomegranate seeds,
1 full tablespoon of lemon juice
