CARROT & BEET SALAD
Put the potatoes in a small covered saucepan with a steamer basket. Steam in 2 cups of water for about 10-12 mins or until soft.
Soak the raisins, almonds and dates in the remaining water for at least 10 mins. Drain completely.
Gently mix the potatoes, raisin mixture and all remaining ingredients in a large bowl. Serve.
A delicious salad with an unusual texture and flavor.
1 cup grated fresh beets, 2 cups grated carrots, 1 cup diced apples, 1/2 cup shredded coconut, 1/2 cup raisins, 1/2 cup dried dates, 1/2 cup chopped almonds, 1/2 cup diced sweet potatoes, 1/4 cup fresh lemon juice, 4 cups water, 1/2 teaspoon salt
